Sunday Funday

Happy Easter
Chicken Milanese
(serves 4)
4 (air-dried is the best!) Chicken Breasts
1 cup of Flour
1 cup of (Panko) Bread Crumbs
1 cup of Parmesan cheese
1 cup of Buttermilk
1/2 cup of Extra Virgin Olive Oil
3 cups of Arugula
2 Tomatoes diced
1 tablespoon of Basil sliced
1/2 cup of chopped white onion
2 lemons cut in wedges
Place each chicken breast between sheets of plastic wrap. Using a meat pounder or heavy skillet thin out the chicken from the center to outer edges (1/2 inch thick). Place the flour in a shallow dish. Place the buttermilk in a bowl. Combine the bread crumbs and cheese in a shallow dish and put all three aside. Once the chicken has been thinned out season both sides with salt and pepper. 1)Take one of the chicken breasts and coat both sides with flour. 2) Then dip the chicken in the buttermilk. 3) After coating the chicken in the buttermilk coat both sides with the bread crumb/cheese plate. 4) Once you have finish these steps place the chicken in a saute pan with 1/2 cup of olive oil over medium heat. Cook each side for 3 minutes or until golden brown. Once cooked place chicken on a plate with a paper towel to drench the oil. Repeat steps 1 through 4 until all pieces of chicken have been cooked. (**The olive oil will be soaked up by the chicken and you will most likely have to keep adding more oil to the pan as you continue cooking the different pieces of chicken).
The salad:
Place the arugula in a bowl and add a tablespoon of extra virgin olive oil and season with salt. In a separate bowl add the chopped tomato, onion, and basil. Add a tablespoon of extra virgin olive oil and season with salt.
The lay out:
Once you have cooked all the chicken place each on a plate. Take 4 wedges of a lemon and squeeze one lemon wedge over the each chicken breast. Evenly distribute the arugula on top of the chicken. Then, evenly distribute the tomato/onion mixture on top of  arugula. Garnish with a lemon wedge on the side. Enjoy!
Over this holiday weekend I watched The Kings Speech with the parentals. It was definitely a great film that informed the viewer of inside secrets on the monarchy in England. Queen Elizabeths mother did not want this film made until after her death. It's interesting to see how embarrassed people are of not fitting the "social-norm" even when you are born a blue blood.
