It was a meatball Sunday. The best recipe for meatballs is Rao's. I used this recipe, and added two links of spicy Italian sausage. I recommend the Japanese Panko bread crumbs. They have more texture and consistency. I served the meatballs with rigatoni and side of broccolini.
Broccolini recipe:
2 bunches of Broccolini (baby Broccoli)
4 cups of water
1/2 Tablespoon of Salt
2 cloves of garlic chopped
3 Tablespoons of Extra Virgin Olive Oil
1 Lemon
First, boil the water and season with salt. Cut at least a half an inch of the stem off the broccolini. Once boiled, blanch the broccolini for 45 seconds to a minute. Drain the broccolini and immediately submerge under cold water to stop the cooking process. In a saute pan add the olive oil over medium-high heat. Add the broccolini and garlic and saute for 5 minutes or until the garlic has turned golden brown. Add the lemon juice, toss, and remove from heat. Serve immediately. Enjoy!
Since it's baseball season I want to suggest For Love of the Game. It's about a pitcher who lends a helping hand to a stranger who's car broke down. I'm sure you can fill in the blanks from there. It's definitely a chick flick and Kevin Costner makes that baseball uniform look good real fast! If you aren't a baseball fan yet you will be after this flick, trust me.
